  • 2 cups all-purpose flour
  • 1 cup apple cider preferably fresh
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 1 cup unsalted butter softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Glaze Ingredients
  • 1 cup powdered sugar
  • 2 tablespoons apple cider for glaze
  • 1 teaspoon vanilla extract

Method
 

Prepare the Bundt Pan
  1. Preheat the oven to 350°F (175°C). Grease and flour a bundt pan.
  2. In a mixing bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
Make the Cake Batter
  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Gradually add the dry ingredients to the butter mixture, alternating with the apple cider, starting and ending with the dry ingredients. Mix until just combined.
Bake the Cake
  1. Pour the batter into the prepared bundt pan and smooth the top.
  2. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the cake to cool in the pan for 10 minutes, then invert onto a cooling rack to cool completely.
Prepare the Glaze
  1. In a small bowl, whisk together powdered sugar, apple cider, and vanilla extract until smooth.
  2. Drizzle the glaze over the cooled bundt cake before serving.
