  • 1 cup chopped walnuts
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 2 cups heavy cream
  • 1 2/3 cups dulce de leche

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, sift together the flour and salt. Stir in the chopped walnuts.
  3. In a stand mixer, cream together the softened butter and powdered sugar until fluffy. Mix in vanilla extract.
  4. Gradually add the flour mixture to the butter mixture until combined. Chill the dough for about 30 minutes.
  5. Roll out chilled dough to about 1/4 inch thick, cut into rounds, and chill again for 15 minutes before baking.
  6. Bake for 8-10 minutes until lightly golden brown, then cool on wire racks.
  7. For the ice cream, heat milk, heavy cream, salt, and dulce de leche in a saucepan until mixed well but not boiling. Strain and chill.
  8. Churn in an ice cream maker according to instructions, freeze until firm.
  9. Assemble sandwiches by placing scoops of ice cream between two cookies.
