  • 1 tablespoon butter or olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 1 cup chopped celery
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 medium potatoes, diced
  • 1 (14.5 oz) can diced tomatoes
  • 67 cups vegetable broth
  • ⅓ cup dry orzo pasta
  • 1 cup frozen sweet corn
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the butter or olive oil over medium heat. Add onions, carrots, and celery; sauté for 8–10 minutes until softened.
  2. Stir in minced garlic and tomato paste; cook for another minute until fragrant.
  3. Add potatoes, diced tomatoes (with juices), vegetable broth, Worcestershire sauce, brown sugar, Italian seasoning, seasoned salt, and celery salt. Bring to a boil.
  4. Once boiling, stir in the dry orzo pasta and reduce heat to simmer for about 25–30 minutes until the orzo is al dente.
  5. In the last five minutes of cooking, add frozen corn; adjust seasoning with salt and pepper as needed.
  6. Remove from heat and stir in fresh parsley before serving warm.
