  • 1/2 cup graham cracker crumbs
  • 8 oz semi-sweet or dark chocolate (for coating)

Instructions

  1. In a bowl, mix mascarpone cheese, powdered sugar, vanilla extract, espresso, and cocoa powder until smooth.
  2. Stir in graham cracker crumbs and refrigerate the mixture for about an hour.
  3. Once chilled, roll the mixture into 1-inch balls and freeze for 15–20 minutes.
  4. Melt the chocolate using a double boiler or microwave.
  5. Dip each truffle into the melted chocolate, allowing excess to drip off before placing them back on a tray.
  6. Dust with cocoa powder and optional drizzle of white chocolate before chilling until firm.
