  • 50 g natural cocoa powder
  • 230 g unsalted butter (roughly cubed)
  • 4 large eggs (room temperature)
  • 150 g granulated sugar
  • 100 g brown sugar
  • 100 g all-purpose flour
  • 250 g mascarpone cheese (cold)
  • 200 g whipping cream (cold)
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons espresso powder
  • 150 g hot water
  • 12 ladyfingers
  • 1 tablespoon cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Melt dark chocolate and butter in a heatproof bowl over simmering water until smooth.
  2. In another bowl, whisk granulated sugar, brown sugar, and eggs until fluffy. Combine with melted chocolate mixture.
  3. Sift in cocoa powder and flour; gently fold until just blended.
  4. Pour batter into a prepared baking dish and bake for 30-35 minutes. Allow to cool completely.
  5. Dissolve espresso powder in hot water; soak ladyfingers briefly in this mixture.
  6. Whip cold whipping cream with powdered sugar until stiff peaks form, then fold in mascarpone cheese and vanilla extract.
  7. Layer soaked ladyfingers over cooled brownies, spread mascarpone cream on top, and dust with cocoa powder.
  8. Refrigerate for at least two hours before serving.
