  • 4 to 6 medium Russet potatoes
  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • shredded lettuce
  • cheddar cheese
  • sour cream
  • salsa
  • guacamole
  • green onion

Instructions

  1. Preheat oven to 400°F. Wash and dry the Russet potatoes, poke holes in them, and wrap in foil. Bake for about an hour until tender.
  2. While the potatoes bake, brown the lean ground beef in a skillet over medium-high heat. Drain excess grease, then stir in taco seasoning and water as per package instructions. Simmer for about 10 minutes.
  3. Once baked potatoes are cool enough to handle, cut a slit down the center of each one and fill generously with the beef mixture. Top with shredded lettuce, cheddar cheese, sour cream, salsa, guacamole, and green onions.
