  2. Separate egg yolks from whites, ensuring no yolk contaminates the whites.
  3. Beat egg whites until stiff peaks form; set aside.
  4. Cream egg yolks with monkfruit sweetener and vanilla extract until light and fluffy.
  5. Fold Greek yogurt into the egg yolk mixture until combined.
  6. Sift cornstarch into the batter, folding gently to avoid lumps.
  7. Carefully fold in beaten egg whites to maintain airiness.
  8. Pour batter into prepared dish and place it in a larger baking sheet filled with boiling water (1/4 to 1/3 submerged).
  9. Bake for 45 minutes at 330°F, then increase temperature to 350°F for an additional 15 minutes.
  10. Allow cake to cool gradually in the oven for 1-2 hours.
