  • 1 cup butter (2 sticks)
  • 1 large onion (approximately 3 and 1/2 cups chopped)
  • 2 cups celery (1/4 inch diced)
  • 1/3 cup fresh parsley (chopped)
  • 1/4 cup fresh sage (chopped)
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 cups chicken or turkey broth (plus additional as needed)
  • 2 large eggs
  • 1 tablespoon softened butter for greasing

Instructions

  1. Preheat oven to 250°F. Tear or cut the bread into bite-sized pieces, spread on a baking sheet, and toast for about an hour until dry but not browned.
  2. While the bread is toasting, chop the onions and celery.
  3. In a skillet over medium heat, melt the butter and sauté the onions and celery until soft (about 7-10 minutes).
  4. Chop the fresh herbs.
  5. In a large bowl, combine toasted bread, sautéed vegetables, herbs, salt, and pepper.
  6. In another bowl, whisk together broth and eggs; gradually add to the bread mixture while gently mixing.
  7. Grease a baking pan with softened butter and spread stuffing evenly.
  8. Cover with foil and bake at 350°F for about 40 minutes; remove foil and bake uncovered for another 25-35 minutes until golden.
