  • 1820 jumbo pasta shells
  • 12 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 4 cups fresh spinach
  • 15 oz. ricotta cheese
  • ½ cup grated Parmesan cheese
  • 3 cups shredded mozzarella cheese
  • 2 tablespoons cream cheese
  • 1 egg
  • 24 ounces marinara sauce
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley
  • ½ teaspoon dried oregano

Instructions

  1. Preheat your oven to 375°F.
  2. Boil the jumbo pasta shells in salted water until al dente, then drain and rinse with cold water.
  3. In a skillet, heat olive oil, sauté garlic until fragrant, then add spinach until wilted.
  4. In a bowl, mix ricotta, half mozzarella, Parmesan, cream cheese, egg, sautéed spinach, salt, pepper, and herbs until well combined.
  5. Spread half the marinara sauce in a baking dish. Fill each shell with the cheese mixture and place into the dish.
  6. Pour remaining marinara over the shells and top with leftover mozzarella and Parmesan.
  7. Cover with foil and bake for 20 minutes; uncover and bake for an additional 10 minutes until bubbling.
