  • 2 medium butternut squash
  • 3 tablespoons olive oil
  • 6 oz fresh spinach
  • 8 oz cream cheese
  • 1 cup shredded Parmesan cheese
  • 3 tablespoons fresh thyme
  • Salt
  • Freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Cut each butternut squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, salt, and pepper.
  2. Place the squash cut-side down on a baking sheet lined with parchment paper and roast for 40-50 minutes until tender.
  3. While roasting, heat 1 tablespoon of olive oil in a skillet and sauté spinach until wilted. In a bowl, mix cream cheese, Parmesan cheese, thyme, salt, pepper, and the sautéed spinach.
  4. Once the squash is cool enough to handle, flip them over and fill each half with the creamy filling. Press down gently to pack it in.
  5. Return stuffed squash to the oven for an additional 15-20 minutes until heated through.
