  • 2 cups fresh spinach (chopped)
  • 1 cup feta cheese (crumbled)
  • 2 tablespoons olive oil
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1/4 cup black olives (sliced)
  • 1/2 cup cooked grilled chicken (diced)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add chopped spinach and sauté until wilted (about 2-3 minutes). Remove from heat and let cool slightly.
  2. In a bowl, mix the wilted spinach with crumbled feta, sun-dried tomatoes, black olives, and diced chicken.
