  • 1 whole chicken
  • 3 tbsp grapeseed oil
  • 6 tbsp unsalted butter
  • 3 tbsp all-purpose seasoning
  • 1½ tbsp black pepper
  • 2 tbsp smoked paprika
  • 4 thyme sprigs
  • 5 garlic cloves (smashed)
  • 1 onion (sliced into medallions)

Instructions

  1. Clean and pat dry the chicken. Cut along both sides of the backbone to spatchcock.
  2. Press down on each side of the back until the chicken flattens.
  3. Season inside and out with oil and seasoning.
  4. Place small pats of butter under the skin and add thyme leaves on top.
  5. Lay sliced onion in a cast iron skillet as a base and place the chicken on top.
  6. Roast in a preheated oven at 375°F for about 75 minutes, basting every 15 minutes.
  7. Allow resting before serving.
