  • 4 large organic sweet potatoes, peeled and cubed
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and cube sweet potatoes.
  2. Toss sweet potatoes with olive oil, cinnamon, and nutmeg. Spread on a baking sheet and roast for about 30 minutes until tender.
  3. In a large bowl, combine roasted sweet potatoes with almond milk, vanilla extract, butter pieces, brown sugar, and maple syrup until creamy.
  4. Stir in additional spices, soaked raisins, vegan marshmallows, and chopped pecans.
  5. Transfer the mixture to a greased baking dish. Drizzle with more maple syrup before baking at 350°F (175°C) for about 60 minutes until bubbly.
