  • 6 medium-small Yukon gold potatoes (about 1 1/2 pounds), peeled and thinly sliced (1/8-inch thick)
  • 3/4 cup grated Gruyere cheese, divided (1/2 cup, 1/4 cup)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper (or black pepper if that is what you have)
  • 1 teaspoon of butter for greasing the gratin or casserole dish
  • 1/3 cup stock (chicken, beef, or vegetable stock)
  • 1 teaspoon finely minced fresh rosemary

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a sauté pan, heat olive oil over medium-high heat and caramelize the onions until golden brown, about 15-20 minutes.
  3. Toss sliced potatoes with olive oil, Gruyere cheese, Parmesan cheese, salt, and pepper in a large bowl.
  4. Butter a gratin dish and layer caramelized onions at the bottom followed by the potato mixture. Pour stock over the top and sprinkle remaining cheese.
  5. Cover with foil and bake for 50 minutes until fork-tender. Remove foil and broil for an additional 5 minutes until golden brown.
  6. Garnish with fresh rosemary before serving.
