  • 4 boneless beef loin chops (150g each)
  • 35g plain flour
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 teaspoons fresh rosemary, diced
  • 2 cloves fresh garlic, diced
  • 120ml chicken stock
  • 90g unsalted butter
  • 1 lemon, cut into wedges

Instructions

  1. In a shallow dish, mix flour, salt, garlic powder, and black pepper. Coat each beef chop evenly on both sides.
  2. Heat olive oil in a large pan over medium-high heat. Sear the beef chops for approximately 3 minutes on each side until golden brown.
  3. Remove the chops from the pan and reduce heat to medium. Sauté rosemary and garlic in the remaining fat for about one minute until fragrant.
  4. Pour in chicken stock and whisk in butter cubes until melted and combined; simmer until slightly thickened.
  5. Return the beef chops to the pan and baste them with the sauce for about one minute before serving with lemon wedges.
