  • 1 small zucchini, diced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup cherry tomatoes, halved

  • Salt and black pepper to taste
  • 1 tsp dried Italian herbs
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine zucchini, bell peppers, cherry tomatoes, and red onion. Drizzle with olive oil and season with Italian herbs, salt, and pepper. Toss well.
  3. Spread the veggies evenly on the baking sheet and roast for 20–25 minutes until caramelized.
  4. Meanwhile, cook the orzo in salted boiling water according to package instructions (about 8–10 minutes). Drain and set aside.
  5. In a large bowl, mix roasted vegetables with cooked orzo. Add lemon juice and parsley; toss gently.
