  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. In a bowl, combine olive oil, garlic, thyme, rosemary, orange zest, and juice to create the marinade.
  2. Place the chicken in a large bowl or resealable bag; pour the marinade over it. Seal tightly and refrigerate for at least an hour or overnight.
  3. Preheat your oven to 375°F (190°C).
  4. Arrange the marinated chicken in a roasting pan with quartered onions; pour chicken broth around it.
  5. Roast for about 1 hour and 15 minutes until juices run clear when pierced between thigh and drumstick.
