  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • kosher salt
  • 6 tablespoons butter
  • 3/4 cup almond milk or coconut milk
  • fresh ground pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the top of the garlic head and wrap it in foil with olive oil. Roast for about an hour until soft and golden.
  2. Place quartered red potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Simmer for about 15 minutes or until fork-tender.
  3. Drain the potatoes and return them to the pot. Add the roasted garlic cloves.
  4. Warm the almond milk or coconut milk and butter until melted, then pour over the potatoes and garlic. Season with salt and fresh ground pepper before mashing until creamy but slightly chunky.
