  • 8 ounces ricotta cheese
  • 1 crusty bread loaf
  • 3 tablespoons olive oil
  • 4 minced garlic cloves
  • Fresh basil
  • Balsamic glaze

Instructions

  1. Preheat the oven to 400°F (200°C). In a baking dish, toss cherry tomatoes with 1 tablespoon of olive oil, 2 minced garlic cloves, salt, and pepper. Roast for about 20 minutes until caramelized.
  2. In a blender, combine the ricotta cheese, 1 minced garlic clove, 1 tablespoon of olive oil, half a cup of fresh basil (reserve some for garnish), salt, and pepper until smooth. Chill until ready to use.
  3. Slice the bread into 12 half-inch pieces. Brush each slice with a mixture of the remaining olive oil and minced garlic. Bake for about 10-12 minutes until golden brown.
  4. Assemble by spreading the ricotta mixture on each toast and topping with roasted tomatoes. Garnish with fresh basil and drizzle with balsamic glaze.
