  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
  2. Stir in cumin and coriander powders until fragrant.
  3. Add rinsed red lentils and canned tomatoes (with juice), mixing well.
  4. Pour in vegetable broth and bring to a boil. Reduce heat to simmer uncovered for about 20 minutes or until lentils are tender.
  5. For a creamier texture, blend part of the soup before serving if desired.
  6. Serve garnished with fresh herbs or a squeeze of lemon juice.
