  • 8 oz cream cheese (softened)
  • 7.5 oz chive & onion cream cheese spread
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder
  • 8 oz sharp cheddar cheese (freshly grated, divided)
  • 1 stem from a bell pepper

Instructions

  1. In a large mixing bowl, combine softened cream cheese, chive & onion spread, salt, pepper, garlic powder, and 1 ¼ cups of shredded sharp cheddar. Mix until smooth.
  2. Lay out cling wrap in a double layer on your counter.
  3. Sprinkle ⅓ cup shredded cheddar in the center of the wrap.
  4. Scoop the cheese mixture onto the shredded cheddar and cover completely with remaining shredded cheese.
  5. Wrap tightly to form a ball shape using cling wrap.
  6. Secure with thick rubber bands to create a pumpkin shape.
  7. Chill in the refrigerator for at least 2 hours.
  8. Remove rubber bands, garnish with bell pepper stem, and serve with crackers.
