  • 1 1/2 cups whole wheat flour
  • 1/2 cup vanilla protein powder
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 cup applesauce
  • 1/4 cup neutral-flavored oil
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam
  • 1 cup confectioners sugar (sugar-free or regular)
  • 2 tablespoons milk or water (as needed)
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat your oven to 170°C/325°F and line a baking tray with parchment paper.
  2. In a bowl, mix whole wheat flour, vanilla protein powder, sugar, and baking powder.
  3. In another bowl, combine applesauce, neutral oil, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients, mixing until a dough forms. If too dry, add 1-2 teaspoons of ice-cold water.
  5. Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  6. Roll out the dough between parchment paper and cut into rectangles.
  7. Place strawberry jam in the center of half the rectangles, leaving edges clear.
  8. Top with remaining rectangles, seal edges with fingers and crimp with a fork.
  9. Bake for 10-15 minutes until golden brown.
  10. Allow to cool before glazing with confectioners sugar mixed with milk or water.
