  • 1 tbsp olive oil
  • 400g (6) chicken or turkey sausages
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic
  • 1/2 tsp dried thyme
  • 3 tbsp all-purpose flour
  • 1 litre/4 cups chicken or vegetable stock
  • 2 bay leaves
  • 100g/1/2 cup wild rice
  • 3 potatoes (medium, peeled and cut into chunks)
  • 375ml/1 1/2 cups light cream or half and half
  • Salt to taste

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Remove the casing from the sausage and add it to the pot, breaking it up with a spatula as it cooks until golden brown. Transfer to a plate.
  2. In the same pot, sauté chopped onion, sliced celery, and carrots over low heat for about 10 minutes until softened. Add minced garlic and thyme; cook for 30 seconds until fragrant. Stir in flour until a paste forms.
  3. Gradually pour in chicken stock while stirring, then add bay leaves and wild rice. Bring to a simmer on low-medium heat for 30 minutes.
  4. Add cubed potatoes, cooking for an additional 15 minutes until tender. Pour in cream and season with salt to taste before removing from heat.
