  • 3 cups sweet corn kernels (fresh or frozen)
  • 1 jalapeño pepper, seeded and minced (optional)
  • 3 tbsp butter
  • 1/4 cup chopped cilantro leaves
  • 1/2 cup crumbled cotija cheese (or feta)
  • 1/2 cup mayonnaise
  • Juice from 1 lime
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package directions in salted water until al dente.
  2. In a skillet over medium heat, melt the butter and sauté corn and jalapeño until slightly caramelized (about 5 minutes).
  3. In a large bowl, combine cooked pasta with sautéed corn mixture, cilantro, cheese, mayonnaise, lime juice, chili powder, smoked paprika, salt, and pepper. Mix gently.
