  • 225g unsalted butter, softened
  • 225g dark brown sugar
  • 4 large eggs, beaten
  • 225g self-rising flour
  • 1 tsp mixed spice
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp molasses
  • 450g mixed dried fruits (raisins, currants)
  • 75g chopped candied fruit
  • 50g chopped almonds
  • 2 tbsp applesauce (plus extra for feeding)

Instructions

  1. Preheat your oven to 150°C and grease a round baking pan (20 cm), lining it with baking paper.
  2. Cream the softened butter and dark brown sugar until light and fluffy.
  3. Gradually mix in the beaten eggs until well combined.
  4. Sift self-rising flour and spices over the mixture; fold gently.
  5. Stir in molasses, dried fruits, candied fruits, and chopped almonds until evenly distributed.
  6. Pour the batter into the prepared pan and bake for 2 to 2.5 hours or until a skewer inserted comes out clean.
  7. After baking, cool the cake for 10 minutes before transferring it to a wire rack.
  8. Once cool, poke holes into the top and brush generously with apple juice; wrap tightly in baking paper followed by aluminum foil.
