  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup light brown sugar, packed
  • 1/2 cup heavy cream
  • 1/2 cup light corn syrup
  • 2 cups chopped pecans
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking dish with parchment paper and lightly spray it with cooking spray.
  2. In a food processor, combine graham cracker crumbs and sugar. Add melted butter and pulse until mixed. Press mixture firmly into the baking dish and bake for about 10 minutes until golden.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and salt. Pour over the baked crust and bake for another 20–30 minutes until slightly jiggly in the center.
  4. For the topping, combine brown sugar, heavy cream, unsalted butter, corn syrup, salt, and vanilla extract in a pot over medium heat, stirring until boiling. Let boil for one minute before adding pecans.
  5. Spread the pecan mixture over the cheesecake layer and bake for an additional 40 minutes until bubbly and golden.
  6. Allow to cool on a wire rack before refrigerating for at least four hours or overnight.
