  • 8 oz crumbled feta cheese
  • 1 cup ricotta cheese
  • 6 sheets phyllo pastry
  • 1/2 cup melted butter or olive oil
  • 1/2 cup honey
  • 1/2 tsp red chili flakes

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix crumbled feta and ricotta cheese until well combined. Add fresh thyme if desired.
  3. Lay one sheet of phyllo pastry on a clean surface, brush lightly with melted butter or olive oil, and place another half sheet on top. Spoon about 2 tablespoons of the cheese mixture at one end and roll tightly into a log.
  4. Repeat until all filling is used, placing assembled rolls on a parchment-lined baking sheet. Brush the tops again with butter or olive oil.
  5. Bake for approximately 20 minutes or until golden brown.
  6. While baking, combine honey and red chili flakes in a small saucepan over low heat until mixed well.
  7. Once baked, drizzle the rolls with the chili honey before serving warm.
