  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1½ cups long-grain white rice, uncooked
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. In a large pot over medium heat, sauté the chicken with olive oil, garlic powder, onion powder, chili powder, cumin, salt, and pepper for about 5–6 minutes until mostly cooked.
  2. Stir in the uncooked rice and the entire can of Rotel. Cook for 1–2 minutes to toast the rice slightly.
  3. Add chicken broth and bring to a boil. Reduce heat to low, cover, and let simmer for 20–25 minutes until the rice is tender.
  4. Stir in nacho cheese sauce and one cup of shredded cheese until melted. Let sit covered for five minutes.
