  • 200g fresh pineapple chunks
  • Juice of 1 lime
  • 2 tbsp chipotle paste
  • 2 tbsp honey
  • 2 large garlic cloves
  • Small handful fresh coriander, chopped
  • 1 ripe avocado, cubed
  • 8 small corn or flour tortillas

Instructions

  1. Marinate the Chicken: Combine lime juice, chipotle paste, honey, crushed garlic, and salt in a bowl. Cut chicken into bite-sized pieces and toss in marinade. Let sit while preheating the oven.
