  • 2 lb boneless, skinless chicken breasts
  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 2 Tbsp avocado oil
  • 2 garlic cloves, minced
  • Fresh basil for garnish
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 1 Tbsp Dijon mustard

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, salt, and pepper.
  3. Toss grape tomatoes and mozzarella with salt and pepper in another bowl.
  4. In an oven-safe skillet over medium-high heat, heat the avocado oil. Season chicken with salt and pepper and sear until golden brown on both sides (about 1-2 minutes per side).
  5. Pour the balsamic sauce over the chicken and layer with tomato and mozzarella mixture.
  6. Bake uncovered for 18-23 minutes until chicken reaches internal temperature of 165°F. Let rest for 5 minutes before serving.
