Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, butter, sugar, and salt until crumbly. Press the mixture into the bottom and up the sides of a muffin tin to form crusts.
  3. In another bowl, mix together toasted pecans, brown sugar, corn syrup, eggs, and vanilla until well combined.
  4. Pour the pecan filling into each crust until just full.
  5. Bake for 20-25 minutes or until edges are set and centers are slightly jiggly.
  6. Allow pies to cool completely in the muffin tin before serving.
