  • 1 large yellow onion, diced
  • 3 medium carrots, diced
  • 4 cloves garlic, finely chopped or grated
  • 4 tablespoons tomato paste
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 cup fresh basil leaves and tender stems
  • 1 teaspoon fresh thyme leaves or a generous pinch dried thyme
  • one 28-ounce can crushed tomatoes
  • 2 cups vegetable stock or broth
  • ½ cup white grape juice (optional)
  • 2 cups heavy cream or unsweetened plant milk
  • kosher salt and ground black pepper, to season

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and carrots; season with salt and pepper. Sauté until softened.
  2. Stir in garlic and tomato paste, cooking until fragrant.
  3. Add basil, crushed tomatoes, vegetable broth, and optional grape juice. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Blend the soup until smooth using an immersion blender or in batches in a regular blender.
  5. Return to pot; stir in cream or plant-based milk. Heat gently and adjust seasoning if needed.
  6. Serve warm, garnished with fresh basil leaves and cracked black pepper.
