  • 1 pound ground beef

  • 3 cloves garlic (minced)
  • 1 bell pepper (diced – any color)
  • 1 jalapeño (seeded and finely chopped – optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups beef broth
  • 1 cup water
  • 1/2 cup long-grain white rice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn
  • Salt and pepper (to taste)
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add ground beef and cook until browned; drain excess fat.
  2. Stir in diced onion, bell pepper, and jalapeño. Sauté for about 5 minutes until softened; add minced garlic and cook until fragrant.
  3. Add ground cumin, chili powder, smoked paprika, and oregano; stir for 1 minute.
  4. Pour in diced tomatoes, beef broth, and water; bring to a boil.
  5. Add rice; reduce heat to low and simmer for 15 minutes until rice is tender.
  6. Stir in black beans and frozen corn; simmer for an additional 5 minutes.
  7. Season with salt and pepper; finish with lime juice and chopped cilantro.
