1 lb ground beef (85% lean or higher)
1 tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1 bell pepper (red or yellow), diced
1 small zucchini, diced
½ tsp salt (adjust to taste)
½ tsp black pepper
1 tsp ground cumin
1 tsp smoked paprika
½ tsp dried oregano
¼ cup kalamata olives, sliced
½ cup cherry tomatoes, halved
2 tbsp fresh parsley, chopped
1 tbsp fresh lemon juice
¼ cup crumbled feta cheese
¼ cup toasted pine nuts
Instructions
Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté for about 2-3 minutes until soft.
Stir in minced garlic and cook for another 30 seconds until fragrant.
Add ground beef, breaking it up as it cooks. Season with salt, black pepper, cumin, smoked paprika, oregano, and optional red pepper flakes. Cook for about 5-7 minutes until browned.
Incorporate diced bell pepper and zucchini; cook for an additional 5 minutes until slightly tender.
Mix in cherry tomatoes and olives; let everything heat through for a couple of minutes.
Remove from heat and stir in fresh parsley and lemon juice before serving.
