  • 6 large eggs
  • 3/4 cup freshly squeezed lemon juice
  • 1 cup unsalted butter (melted)
  • 1 tablespoon corn starch
  • 1/4 teaspoon salt

Instructions

  1. Prepare the raspberry puree by cooking down 2 cups of raspberries over medium heat until thickened. Strain to remove seeds and set aside.
  2. In a bowl, mix flour, sugar, corn starch, and salt. Add melted butter and stir until crumbly. Press into a greased baking dish.
  3. In another bowl, whisk sugar, corn starch, and eggs until smooth. Gradually add raspberry puree and lemon juice; mix well.
  4. Pour custard over the crust and bake at 350°F (175°C) for about 45 minutes until slightly jiggly in the center.
  5. Cool completely before cutting into squares.
