  • 1 lb fresh green beans
  • 4 tablespoons unsalted butter (or olive oil for dairy-free)
  • 4 cloves garlic, minced
  • 1 large lemon (juice and slices)
  • 2 tablespoons olive oil
  • 1/4 cup chicken broth (or water)
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish

Instructions

  1. Prepare your ingredients: trim green beans, mince garlic, and season tilapia.
  2. In a skillet, heat olive oil over medium-high heat and sauté green beans until bright green and crisp-tender (about 4-6 minutes). Remove and set aside.
  3. In the same skillet, add more olive oil and butter. Sear the seasoned tilapia fillets for about 2-3 minutes on each side until golden brown.
  4. Add minced garlic and optional red pepper flakes to the skillet until fragrant.
  5. Pour in chicken broth (or water) along with lemon juice, scrape up browned bits, and let simmer briefly.
  6. Return tilapia and green beans to the pan, nestle lemon slices around them, cover loosely, and cook for another 3–5 minutes until fish is cooked through.
  7. Garnish with fresh herbs before serving.
