  • ½ teaspoon dried parsley
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté diced carrots, chopped onion, and celery until softened.
  2. Add minced garlic, black pepper, parsley, thyme, and salt; cook until fragrant.
  3. Place chicken breasts into the pot, add chicken broth and bay leaves. Bring to a boil then reduce heat to simmer for 25 minutes.
  4. Remove chicken to shred into bite-sized pieces; return to pot along with orzo pasta.
  5. Cook orzo as per package instructions. Stir in fresh lemon juice before serving.
