  • 1 cup finely chopped onion
  • ½ cup finely chopped celery
  • 1 tablespoon minced garlic (about 3 cloves)
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced carrots, chopped onion, and celery; sauté for 5–7 minutes until softened.
  2. Stir in minced garlic and cook for 1 minute. Add black pepper, dried parsley, thyme, and salt.
  3. Incorporate chicken breasts and bay leaves; pour in chicken broth. Bring to a boil then reduce heat to simmer for 30 minutes.
  4. Remove chicken, shred it with two forks, then return it to the pot along with dry orzo pasta. Cook until orzo is tender, about 10 minutes.
