  • 12 cooked lasagna noodles
  • 16 oz ground beef (85% lean)
  • 24 oz marinara sauce
  • 15 oz ricotta cheese
  • 3 cups mozzarella cheese (shredded)
  • 1 large egg
  • 1/2 cup diced onion
  • 3 garlic cloves (minced)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 cup parsley (chopped)
  • 1/4 cup parmesan cheese (shredded)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and rinse in cold water.
  3. In a pan, cook ground beef until browned; add onion, garlic, salt, pepper, and oregano. Stir in marinara sauce and simmer.
  4. Combine ricotta cheese with egg, Parmesan cheese, 1½ cups mozzarella, and parsley in a bowl.
  5. Spread cheese mixture on each noodle, add meat sauce down the center, and roll tightly.
  6. Place roll-ups seam-side down in a casserole dish; cover with remaining meat sauce and mozzarella.
  7. Bake covered for 40 minutes; uncover and broil for an additional 2-3 minutes until golden.
