  • 3 cloves garlic, minced

  • 1 tablespoon peanut butter
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sriracha (optional)
  • 3 tablespoons warm water
  • 2 cups kimchi, roughly chopped
  • 2 teaspoons toasted avocado oil
  • 2 teaspoons brown sugar
  • 8 fajita-size (6-inch) flour tortillas
  • Cucumbers (sliced)
  • Carrots (julienned)
  • Avocado (sliced)
  • Fresh herbs (cilantro, mint, green onions)
  • Crushed peanuts
  • Sriracha mayo (see note)
  • Lime wedges

Instructions

  1. Heat avocado oil in a skillet over medium-high heat. Add ground chicken, cooking until fully done (5-6 minutes). Season with salt and pepper.
  2. In a separate bowl, whisk together soy sauce, brown sugar, garlic, ginger, peanut butter, sesame oil, sriracha (if using), and warm water. Pour over cooked chicken; stir to combine.
  3. In another skillet, heat avocado oil and add chopped kimchi. Cook for about 10 minutes until softened and caramelized.
  4. Prepare fresh veggies by julienning cucumbers and carrots; slice avocado.
  5. Warm tortillas either in the oven or on a skillet. Assemble tacos with chicken mixture, kimchi, veggies, and desired toppings.
