  • 1 ½ lbs ground beef
  • 1 large egg
  • ½ cup seasoned panko breadcrumbs
  • 4 cloves garlic, minced
  • 2 tablespoons jerk seasoning
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 shallot, finely chopped
  • 3 cloves garlic, minced
  • 1 small green bell pepper, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 3 teaspoons Jamaican curry powder
  • 14 oz can full-fat coconut milk
  • Rice or veggies as desired
  • Sliced scallions for garnish

Instructions

  1. In a bowl, mix ground beef, egg, breadcrumbs, garlic, jerk seasoning, ginger, salt, and pepper until just combined.
  2. Form into 20-22 meatballs and place on a baking sheet.
  3. Heat butter and olive oil in a skillet; sear meatballs until browned (about 3 minutes per side). Remove from the pan.
  4. Sauté shallots and garlic in the same pan; add bell peppers and cook until softened.
  5. Stir in curry powder and coconut milk; bring to a gentle boil.
  6. Return meatballs to the sauce; cover and simmer for 20-25 minutes until cooked through.
