  • 2 cups cooked brown rice or quinoa
  • 1 cup corn kernels
  • 1 cup black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1/2 cup shredded lettuce or baby spinach
  • 1/4 cup light ranch dressing
  • 2 tablespoons BBQ sauce
  • Optional: Fresh cilantro or green onions for garnish

Instructions

  1. Marinate the chicken by mixing olive oil, garlic powder, smoked paprika, salt, and pepper in a bowl. Rub this mixture over the chicken and let it sit for about 10 minutes.
  2. Heat a grill pan over medium-high heat. Cook the marinated chicken for 6–7 minutes on each side until it reaches an internal temperature of 165°F (74°C). Allow to rest before slicing.

  4. Assemble each bowl starting with a base of grains, followed by corn, black beans, tomatoes, onion, greens, and sliced chicken on top.
  5. Drizzle ranch dressing mixed with BBQ sauce over the assembled bowls and add optional garnishes like cilantro or green onions.
