  • 2 chicken breasts
  • 2 cups chicken broth or water
  • 2 tsp salt
  • 2 cans black beans (15 oz each, drained)
  • 1 onion (diced)
  • 15 oz creamed corn
  • 1 cup salsa
  • 2 diced jalapeños
  • 1 tsp chili powder
  • 1/8 tsp ground cayenne pepper
  • 1/3 cup creamy ranch dressing
  • 4 oz cream cheese

Instructions

  1. Prepare your ingredients by dicing the onion and jalapeños, draining the black beans, and cutting the chicken into pieces if needed.
  2. Set the Instant Pot to sauté mode. Add a splash of broth if needed and sauté the onion and jalapeños until soft.
  3. Add chicken breasts, broth, and salt to the pot.
  4. Stir in black beans, creamed corn, salsa, chili powder, cayenne pepper, ranch dressing, and cream cheese.
  5. Seal the lid and cook on high pressure for 25 minutes. Allow natural pressure release for about 10 minutes before quick releasing any remaining pressure.
  6. Shred chicken if desired and stir well before serving.
