  • 4 salmon filets (46 ounces each)
  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
  • 2 cups cooked white rice
  • 1 avocado
  • 1 cucumber (sliced)
  • 1 cup cooked edamame
  • 1/2 cup sriracha mayo

Instructions

  1. Cut salmon into 1-inch cubes and optionally remove skin.
  2. In a large bowl, whisk together soy sauce or tamari, honey, sriracha, minced garlic, and water.
  3. Marinate the salmon cubes for at least 20 minutes.
  4. Heat oil in a skillet over medium heat; add marinated salmon and cook for 2-3 minutes on each side until crisp.
  5. Pour in reserved marinade and cook until slightly thickened.
  6. Assemble bowls with rice, salmon, avocado slices, cucumber, and edamame.
  7. Drizzle with sriracha mayo before serving.
