  • 1 pound boneless, skinless chicken thighs or breasts
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup black beans, drained and rinsed
  • 1 avocado, diced
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Cook the rice by boiling 2 cups of long-grain white rice in 4 cups of water for about 18-20 minutes until tender.
  2. Prepare the marinade by whisking honey, lime juice, soy sauce, lime zest, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Marinate the chicken in half of the marinade for at least 15 minutes.
  4. Heat olive oil in a skillet over medium-high heat and cook the chicken for 5-7 minutes on each side until browned and cooked through.
  5. Add corn and black beans to the skillet; stir until heated through.
  6. Slice the chicken and assemble bowls with rice as a base topped with sliced chicken, corn-bean mixture, and avocado.
