  • 2 tablespoons teriyaki sauce

  • 1 tablespoon olive oil

  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 red bell pepper, diced
  • 1 cup snap peas or green beans
  • 1 avocado, sliced
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a bowl, mix soy sauce, teriyaki sauce, honey, olive oil, garlic powder, ginger powder, salt, and pepper.
  2. Marinate chicken thighs in the mixture for at least 30 minutes.
  3. While marinating, chop bell pepper and snap peas; slice avocado.
  4. Cook marinated chicken in a preheated grill or skillet over medium-high heat for 6-8 minutes per side until browned and cooked through.
