  • 2 medium zucchinis (about 2 lbs), sliced into 1/2” rounds
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 lb lean ground beef (or turkey/chicken)
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 (28 oz) can diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Prepare the zucchini by slicing it into rounds and sprinkling with salt. Let sit in a colander for 15 minutes to draw out moisture.
  2. Rinse zucchini under cold water and pat dry. In a skillet over medium heat, warm olive oil and sauté onions for 2 minutes; add garlic and cook for an additional 30 seconds.
  3. Add ground beef and cook until browned, about 5 minutes. Stir in drained tomatoes, Italian seasoning, salt, and pepper.
  4. Preheat oven to 350°F (175°C). In a baking dish, layer half of the beef mixture, followed by half of the zucchini slices and half of the mozzarella cheese. Repeat layers.
  5. Bake for 20-25 minutes until cheese is melted and golden brown.
  6. Allow to cool for 10 minutes before serving.
