  • 4 medium russet potatoes, peeled and diced

  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Dried thyme
  • Paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté chopped onions and minced garlic until fragrant.
  3. Add ground beef along with salt, pepper, thyme, and paprika. Cook until the beef is browned.
  4. Stir in the beef broth and let it simmer briefly.
  5. In a large bowl, combine diced potatoes with the beef mixture. Gently fold in sour cream and half of the cheddar cheese.
  6. Transfer the mixture to a baking dish, top with remaining cheddar cheese.
  7. Cover with foil and bake for 30 minutes; then remove foil and bake for an additional 10-15 minutes until golden brown.
