  • 2 medium zucchinis
  • 1 cup uncooked quinoa
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped parsley or chives

Instructions

  1. Bring the steak to room temperature and season with olive oil, salt, pepper, garlic powder, and smoked paprika.
  2. Preheat your grill over high heat.
