  • 2 medium zucchinis, sliced
  • 1 cup uncooked quinoa (or rice/farro)
  • ½ cup sour cream or Greek yogurt
  • 1 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
